i made chili, based off of this recipe. which i believe i've mentioned here before. somewhere. actually, i used bad stew meat (good stew meat would have been much better, or just ground beef probably would have been best), a white onion, two cloves of garlic, a small can of kidney beans, a small can of black beans, a normal can of whole tomatoes, lots of chili powder, cayenne and cumin, two chipotle peppers from a can, juice from half a lime and half a bottle of guinness. mmm. (update, it got pretty bad after a couple of days)
i also made this corn, sort of. i found the cotija cheese at key foods, but it was a gigantic bag, so i passed. instead, corn (boiled, because that's the only way i know how to make corn, and then holding it over the gas flame was sort of disconcerting/carcinogenic, so i stopped that right away) with butter and mayonaise mixed with some of the sauce from the chipotle peppers did i very nice job of emulating the ellotes callijeros from chavella's on the block over.
i made chocolate jello pudding (cook and serve, not instant) because i wanted to see how good it would be. i usually make this, which is not that much harder (although it takes longer to thicken up) and i've recently discovered that the pre-made chocolate pudding from trader joe's is pretty amazing. anyway, it was underwhelming and sort of gross warm, but once it cooled in the fridge, it became delicious.
